Whenever I’m working with a client and I suggest adding veggies to their breakfast routine, many of them give puzzled looks. Why not jumpstart the day with getting veggies into your daily routine! Many of us struggle with eating enough antioxidant & nutrient-rich veggies throughout the day, so instead of cramming it all in at dinner, add a serving to your breakfast!

How can you do this??

Here are a few breakfast veggie ideas:

  1. Toss some spinach, cauliflower, or kale into a smoothie.
  2. Add chopped veggies to an egg scramble or omelet.
  3. Or…try this delicious Zucchini Bread Oatmeal.

 

You can swap out the zucchini with grated carrots instead for a “Carrot Cake” oatmeal too. The possibilities are endless!

Zucchini Bread Oatmeal

Here is one way you can add more veggies to your breakfast! This simple recipe tastes just like zucchini bread & is packed with fiber, protein, & healthy fats! A great way to start the day!

Ingredients
  

  • 1 small zucchini grated
  • 1 cup oats rolled
  • ¾ cup soy milk or other milk of choice
  • 2 tbsp maple syrup
  • 2 tsp cinnamon
  • 1 tsp nutmeg
  • 4 tbsp walnuts

Instructions
 

  • Wrap grated zucchini in a thin towel or cheese cloth. Squeeze out as much moisture as you can.
  • Add zucchini to a bowl with oats and soy milk. Microwave on high for about 2-3 minutes, until oats are cooked through.
  • Add maple syrup, cinnamon, & nutmeg. Stir to combine.
  • Divide into 2 bowls. Add 2 tbsp of walnuts on each bowl. Enjoy!
