Zucchini Bread Oatmeal
Here is one way you can add more veggies to your breakfast! This simple recipe tastes just like zucchini bread & is packed with fiber, protein, & healthy fats! A great way to start the day!

- 1 small zucchini grated
- 1 cup oats rolled
- ¾ cup soy milk or other milk of choice
- 2 tbsp maple syrup
- 2 tsp cinnamon
- 1 tsp nutmeg
- 4 tbsp walnuts
Wrap grated zucchini in a thin towel or cheese cloth. Squeeze out as much moisture as you can.
Add zucchini to a bowl with oats and soy milk. Microwave on high for about 2-3 minutes, until oats are cooked through.
Add maple syrup, cinnamon, & nutmeg. Stir to combine.
Divide into 2 bowls. Add 2 tbsp of walnuts on each bowl. Enjoy!
