I’ll admit – I was pretty nervous about putting pumpkin puree into my chili recipe. I literally pictured stirring in pumpkin pie, but to my surprise, it was a phenomenal addition to my classic chili recipe! Not only does the pumpkin puree provide great flavor, it adds a smooth texture. It’s also a great way to add a nutrient boost to your regular chili recipe. Pumpkin is full of vitamins A and C, fiber, and potassium. It’s a perfect fall meal to try as the weather starts to cool down!

Powerful Pumpkin Chili

Ingredients
  

  • 1 tbsp avocado oil
  • 1 large onion chopped
  • 1 medium red bell pepper chopped
  • 5 cloves garlic minced
  • 1 lb. ground beef 90% lean
  • 1 15 oz. can died tomatoes
  • 1 15 oz. can kidney beans drained & rinsed
  • 1 15 oz. can pumpkin puree
  • cups chicken broth low sodium
  • 2 tbsp chili powder
  • 1 tsp ground cinnamon
  • 2 tsp ground cumin
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp cayenne optional

Instructions
 

  • Saute onions and garlic in oil over medium heat until fragrant. Add ground beef and cook completely.
  • Add all remaining ingredients and stir together. Let simmer for 10-12 minutes on medium low heat, until slightly reduced.
  • Simmer on low for 5 minutes. Top with shredded cheese, avocado, or whole grain crackers.
