Spinach in muffins?!

Yep, you read that correctly.

I add spinach to a plethora of things: smoothies, pasta, taco meat…you name it.

But muffins?

I found this recipe online through That Clean Life and was SO excited to develop my own version of it.

The results? My kids LOVED them, and it made me realize how easy it is to add veggies into your breakfast and snack routine in a fun way.

You can replace the eggs with ground flax or avocado (read more about replacing ingredients here) or simply follow the recipe as is!

Green Muffins

Green is a favorite color in our household. These green muffins provide ample nutrition to start the morning off right, and are super easy to make...all you need is a blender and some muffin tins! It is a perfect breakfast or snack idea.

Ingredients
  

  • 1 tsp coconut oil melted
  • 2 cup spinach pack into cups
  • 2 bananas
  • ½ cup vanilla protein powder
  • 5 dates pitted
  • ¾ cup almond or oat milk unsweetened
  • 1 tsp cinnamon
  • 2 eggs
  • 2 cups rolled oats
  • 1 tbsp baking powder

Instructions
 

  • Preheat oven to 350°F. Line a muffin tin with paper muffin cups, or spray well with non-stick oil spray.
  • Blend everything together very well, until smooth. Pour into baking cups.
  • Bake for about 20 minutes, or until the middles have risen slightly and is cooked through.
