If you know me well, you know I like an easy meal you can make in 15 minutes or less. This stir-fry recipe with tahini garlic sauce is perfect for any busy weeknight. I often make so much I can add the leftovers to a container and eat it for lunch the rest of the week!

My favorite part about this meal is you can totally make it your own. I do what I call a “veggie dump” where I take all the veggies that are looking like they need to be used soon or they’ll go bad, chop them up, and sauté them together with either tofu or chicken.

The other highlight you’ll see in this recipe: Seeds of Change microwaveable brown rice! Oh my, I’m IN LOVE with this product. I cannot stand making my own rice or quinoa because I never get it to quite the right consistency. Plus, I love the flavors Seeds of Change have – my favorite is the kale & chia! Yum!

Easy 15-Minute Stir Fry With Tahini Garlic Sauce

Ingredients
  

  • 1 tbsp sesame oil
  • 1 tbsp tamari or low sodium soy sauce
  • 1 14 oz package tofu extra firm; chopped and cubed
  • 3 cups chopped assorted veggies zucchini, broccoli, & snap peas are used in this recipe
  • ¼ cup tahini
  • 2 garlic cloves minced
  • ¼ cup tamari
  • 2 tbsp lime juice
  • ½ tsp crushed red pepper
  • 1 cup cashews
  • 1 package Seeds of Change microwaveable brown rice & quinoa

Instructions
 

  • Add sesame oil to a pan. Toss in cubed tofu and sauté for 2-3 minutes, until tofu is lightly browned on the outside.
  • Add assorted veggies and tamari. Cook for 5-8 minutes, until veggies are soft.
  • Meanwhile, toss together tahini, garlic cloves, tamari, lime juice, and crushed red pepper. Whisk together until combined well.
  • Add tahini garlic sauce to veggies and tofu. Toss in cashews. Cover with lid and cook additional 2-3 minutes until cashews are soft.
  • Heat up microwaveable brown rice & quinoa in the microwave for 90 seconds.
  • Combine ¼ cup of rice and 1½ cups of stir fry together in a bowl. Enjoy!
