I’m a huge fan of meal prepping breakfast for busy weeks.

For one, it takes the stress out of deciding what to eat for breakfast that’s both healthy & satisfying.

Two, it makes for quick & easy breakfast ideas, especially for those who are awake & out the door within 30 minutes.

I love this recipe! It’s easy to store the leftovers in the refrigerator for breakfast all week OR even a tasty & healthy dessert option.

You can experiment with the berry & nut flavors: Try raspberries & blackberries, pistachios or chopped walnuts, you choose! Make it your own creation!

Breakfast Berry Oatmeal Bake

Meal prep your breakfast ahead of the week with this "berry" delicious oatmeal bake!

Ingredients
  

  • 4 cups oats
  • 4 cups almond milk or milk of choice
  • 1 cup applesauce unsweetened
  • ¼ cup maple syrup
  • 2 tsp cinnamon
  • 1 tsp ground ginger
  • ¼ cup chia seeds
  • 2 cups blueberries frozen
  • 2 cup cherries frozen
  • ½ cup almonds sliced

Instructions
 

  • Preheat oven to 350 degrees F. Grease a large baking sheet.
  • Mix all ingredients together, minus the almonds. Spread mixture into pan.
  • Bake 45 minutes, or until no longer appearing "wet".
  • Pull out of the oven and top with sliced almonds.

Notes

You can make any adjustments to this recipe to make it your own! Swap out different berries (blackberries, huckleberries, etc.) and/or swap out almonds with chopped walnuts or pistachios.
