I love a good salad…especially one that’s filling, nutritious, and easy to make!
This superfood salad is perfect for an easy side dish to any meal. The best part is, you can make it in a large batch and save it in the refrigerator for leftovers. Kale is a super sturdy vegetable that does not wilt easily, and the longer the kale sits massaged, the better texture and flavor it has!
I love the antioxidant-rich kale, berries, and almonds mixed together in one salad. You can make your own version of this salad by swapping out berries, nuts, and dried fruit flavors. For example, toss together raspberries, pecans, feta cheese, and dried cranberries. Or, omit the dried fruit and add blueberries, raspberries, and blackberries, walnuts, and goat cheese. Try some new combinations and make this an easy salad staple!
Simple Superfood Salad
Ingredients
- 6 cups kale, chopped
- 3 tbsp olive oil
- 2 tbsp balsamic vinegar
- 2 tsp lemon juice
- ½ tsp salt
- ¼ cup sliced almonds
- ¼ cup dried cherries or cranberries no added sugar
- 1 cup blueberries
Instructions
- Mix together olive oil, balsamic vinegar, lemon juice, and salt. Set aside.
- Chop kale and add to large bowl. Add olive oil mixture to kale. Massage for about 2 minutes, until kale leaves are softened.
- Toss in sliced almonds, dried cherries, and blueberries.
