I love a good holiday snack. Even though we have our favorite indulgent goodies, it’s always fun to make healthy holiday treats. These Peppermint Energy Bites are so easy to make and are a perfect energy-boosting snack. Enjoy some healthy holiday treats – including these tasty energy bites!
If you’re not a peppermint fan, you can always experiment with different coatings. Try dipping them into melted chocolate for a healthy truffle idea, or simply coat them with powdered sugar. You can even cover them in cocoa powder, a little sugar, and fun holiday sprinkles. Make them as you please!
Peppermint Energy Bites
I'm a snacker - I love having fun, healthy snacks around for both myself & my family! The holidays are such a fun time of year when it comes to food. We always need a healthy pick-me-up to keep us fueled with our festive activities. These peppermint energy bites are full of fiber, antioxidants, & natural energy. The peppermint flavor adds a holiday twist to our every day energy bites.
Ingredients
- 8 ounces pitted dates 1 3/4 cup, or 1 8 oz bag
- ½ cup nut butter peanut or almond, smooth
- ⅔ cup oats rolled
- 1 ½ ounces dark chocolate
- ¼ tsp salt
- 3 large candy canes crushed
Instructions
- Add dates, nut butter, oats, dark chocolate, and salt to food processor or blender. Blend together until smooth.
- Roll into 12 balls (or adjust the size as needed to your liking).
- If candy canes need to be crushed, add to food processor and blend until almost a fine powder. Or, add them to a gallon-sized bag and break pieces with a large cooking spoon until fine in texture.
- Roll balls into candy cane powder. Add to cookie sheet and refrigerate 30-60 minutes.
- Keep refrigerated in container. Enjoy!
